Zucchini Bread

  • eggs
  • vegetable oil(not olive)
  • sugar
  • grated zucchine, well drained
  • vanilla
  • sifted all-purpose flour
  • baking powder
  • baking soda
  • ground cinnamon
  • salt
  • raisins
  • chopped walnuts
Grate zucchini, put in strainer allow about 10 minutes for liquid to drain (about 3 medium ones should give you 2 cups drained).
Preheat oven to 375 degrees
Grease 2 loaf pans 8 by 5 by 3

Sift flour, baking powder, baking soda, and salt in a bowl and set aside.
In a large bowl beat eggs lightly. Stir in oil, sugar, zucchine, and vanilla.
Mix thoroughly. Stir in 1/3 of the flour mixture. mix well. Add another third, and mix, followed by the last third; mix until all flour is well blended.
Stir in raisins and nuts. Spoon batter equally into two well greased loaf pans.
Bake at 375 degrees for about 60 minutes. They're cooked when top is pressed and bread springs back.
