Broccoli Mom’s Way

  • 1 bunch fresh broccoli or 3 broccoli crowns
  • 1 tablespoon chopped garlic
  • 4 tablespoons olive oil,divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
Peel and slice stems. Divide crowns into florets. Set aside. Can be prepared ahead.
Using a high sided pan or pot add enough water to cover half the broccoli, estimate, do not add broccoli, to water add salt, pepper and 2 tablespoons oil. When water boils add broccoli. Cook till tender. Drain. In same pan add 2 tablesoons oil and chopped garlic. Heat add cooked broccoli. Taste adjust seasoning. Toss.

Variation: Pasta with Broccoli

Cook 1 lb pasta like bow ties

Prepare broccoli as instructed but RESERVE broth from cooked broccoli. Add broccoli with 1/2 the broth to cooked pasta. Toss,add more broth if needed. Serve with parmesan cheese.
