Meat Sauce and or Baked Ziti

  • 1 lb ground meat 85% lean
  • 1 lb ziti
  • 1/4 cup onions chopped
  • 2 large garlic cloves chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon parsley flakes
Put pot filled with water on high heat,make meat sauce while water is heating to a boil. When meat sauce is simmering add pasta to boiling water and cook according to packaged directions.

Meat sauce
Heat over medium heat a large frying pan. Add crumbled ground meat. Stir till it becomes gray looking, add onions,garlic,salt,pepper,and parsley. Stir occasionly. Cook over high heat for appox 4 mim stirring ocassionally. The watery juices should evaporate leaving only the oil. The meat should be browned. Drain off oil. Return to pan add 3 cups basic tomatoe sauce. Heat and let simmer.
Cook pasta(rigatoni,penne,etc.)

Add meat sauce to cooked pasta, toss and serve. Serve with extra sauce and grated parmesan cheese.

To make baked ziti. Preheat oven to 350 degrees

Cook ziti, drain. In pot return drained ziti add meat sauce,1 cup shredded mozzarella,and a 15 oz container ricotta. Blend, put mixture in oven proof casserol. Bake 40 mimutes, till bubbly. Serve with extra sauce and parmesan cheese.

Uses appox. 1 quart basic tomatoe sauce. Can become baked ziti by adding ricotta and mozerellla.
