Meatballs

  • 1 1/2 lbs ground meat (85%lean)
  • 2 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried parsley flakes
  • 1/4 cup grated locatelli cheese
  • 3/4 cup plain bread crumbs
  • 1 1/2 cups cold water
Heat griddle to 350 degrees. If using a fry pan add 2 tablespoons canolli oil and heat.

In a large bowl add meat, slightly beaten eggs, salt, pepper, parsley, grated cheese, breadcrumbs, and 1 cup water. Mix. It should feel sticky and soft. If not add more water. Form ball shapes in the palms of your hand, like forming snowballs. Do not pack tightly, just enough to hold together.

Put meatballs on griddle or pan and sear on all sides till crusty brown on the
outside but very pink inside. Set aside.

Make basic tomatoe sauce. Add meatballs when you begin simmering the sauce. The meat and sauce should simmer together.

To add sausages: In a hot frying pan add 4-6 links sweet or hot Italian sausages, brown on all sides. Add to sauce at the same time as meatballs.

Simmer sauce and meat till oil rises to top, about 40 mims. Stir occasionally. Taste and correct seasonings adding sugar, salt, and pepper as needed.
