Peas Mon’s Way

  • 1 ten ounce box of frozen peas
  • 1 tablespoon chopped garlic
  • 2 tablespoons chopped onion
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon crushed red pepper
  • 2 cups water
  • parsley
  • parmesan
In a small pot over high heat cook oil,onions, and galic. Add salt and red pepper. Stir cook till soft not brown. Add water and frozen peas. Heat to boil, lower to medium heat, cook till tender. Taste and correct seasonings adding salt and,pepper if needed. Drain liquid. Put in serving dish. Top with fresh chopped parsley and a drizzle of olive oil.

Variations:

Pasta with Peas
Cook pasta like small shells reserve a cup of pasta water. Cook peas as directed but DO NOT DRAIN. Add peas and their broth to cooked pasta in serving bowl.If pasta needs more liquid add some of the reserved pasta water. Sprinkle a little parmesan cheese on top and serve.

Grandpa Tantillo's favorite was his home grown freshly hulled fava beans and peas cooked togher as written in instructions. Sometimes served as a side dish other times with pasta as part of the main meal.

Pasta with Peas and Asparagus

Add cut fresh asparagus when you add the peas to the boiling water.
