Quiche Lorraine

  • 9-inch unbaked deep pie shell, well chilled
  • butter softened
  • bacon slices
  • eggs
  • heavy or whipping cream
  • each of nutneg, cayenne, and sugar
  • pepper
  • natural Swiss cheese, shredded (1 cup)
  • salt
Preheat oven to 425degrees F.

Rub surface of chilled unbaked pie shell with butter.
Fry bacon untill crisp; crumble into small pieces Set aside.
Dice Swiss chesse. Set aside.

Combine eggs, cream, salt, nutmeg, sugar, cayenne; whip with a fork just long enough to mix thoroughly. (Hint: break the egg yolks with the fork before addding other ingredients)

Sprinkle pie shell with bacon and cheese; pour in cream mixture.

Bake 15 minutes. Reduce oven heat to 300 degrees F.; bake 40 minutes or untill knife inserted in center comes out clean.
