Royal Icing

  • 2 large egg whites
  • 3-1/2 cups sifted confectioners' sugar
  • 1 lemon juice freshly squeezed
  • 2 drops glycerin
  • food coloring
Beat egg whites until stiff but not dry. Add sugar, lemon juice and glycerin Beat 1 min. If icing is too thick, add water. If tooo thin, add more sugar.

Divide icing into smaller bowls. Tint with small amounts of paste or liquid food coloring; mix well for an even color.

Homemade piping bag can be made from a parchment paper triangle by rolling the triangle tightly into a cone. Fill halfway with icing, fold down the top, and snip the tip with scissor to make a small hole;. or

A metal forcing tube and plunger assembly.
