Strufoli

  • 1/4 cup caindied citron
  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 3 eggs
  • 1/4 cup vegetable oil
  • Grated rind from 1 lemon
  • Vegetable oil for frying
  • Honey Coating
  • 1/2 cup honey
  • 1/2 tablespoon sugar
  • 1/4 cup candied lemon peel
  • 1/4 cup candied orange peel
  • 1/2 teaspoon grated orange rind
  • Nonpareil candies
1. Prepare Strufoli. Combine flour and sugar in medium- size bowl. In another bowl, combine eggs, oil and rind. Stir egg mixture into flour to form a soft dough.

2. Turn dough out onto fo9luredd surface. Knead until smooth and elastic, about 3 minutes; add more flour as needed to prevent sticking. Shape into disk.

3. With knife, slice pieces of dough about 1/2inch thick. On a lightly floured surface, roll into 1/2inch thick rope. Cut rope into 1/2 pieces.
Repeat with remaining dough.

4. Heat 1/2inch vegetable oil in large skillet until it registers 375degrees on deep-fat frying thermometer. Add enough strufoli to fill skillet. Cook strufoli until golden brown, stirring freguently. With slotted spoon, remove to paper toweling to drain. Repeat with remaining strufoli.

5. Prepare coatiing. Heat honey and sugar in large, heavy saucepan over medium heat until mixture registers 255degrees on candy thermometer.. Remove from heat Stir in candied cirtron, lemon peel and orange peel. Add orange rind. Stir in strufoli until well coated. When mixture is cool enough, with wet hands arrange strufoli on platter in the shape of a ring or mound. Sprinkle with candies.
