Sugar Cookies

  • 2 cups sifted all-purpose flour
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 8 tbl unsalted butter ( 1 stick)
  • 1 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract, or 1 tsp fresh lemon juice and zest of 1 lemon
In large bowl sift together flour salt and baking powder. Set aside.

In the bowl of a electric mixer fitted with paddle attachment, cream together butter and sugar until fluffy. Beat in egg.

Add flour mixture, and mix on low speed until thoroughly combined. Stir in vanilla or lemon juice and zest.

Wrap dough in plastic; Chill for 30 min

Heat oven to 325F

On well-floured board, roll out dough to 1/8 inch. Cut into desired shapes. Place on ungreased baking sheet and chill until firm, about 15 min. Bake 8-10 min, or till edges start to brown lighly.

Cool on wire racks.
